Cherry Clafouti
3 cups pitted sweet cherries (about 1 pound)
Butter for greasing the baking ban
4 eggs
1 cup of milk
3/4 cup unbleached white flour
1 teaspoon pure vanilla
1/2 cup sugar
1/4 teaspoon ground cinnamon
1 tablespoon butter
Heat the oven to 350
Lightly butter a 9 or 10 inch baking pan
Arrange cherries in a single layer in the pan
In a blender whirl all other ingredients until smooth.
Pour batter over the cherries.
Bake for 55-65 minutes until the clafluti is puffed and golden and a
knife inserted in the middle comes out clean.
Cool at least 15 minutes.
Goes well with ice cream.
Turns out you can do this with any fruit - pears, apples, berries, etc.
